Quinoa or Keen Wa

Quinoa or Keen Wa

If you haven't tried this stuff you should.  Its a super food much better for you than rice.  One cup had 3 grams of fiber, 8 grams of protein and only 39 grams of carbohydrates.  Its a good choice of grain for diabetics.

Quinoa and broccoli

1 cup quinoa
2 cups chicken stock
1 small onion chopped
2 cloves of garlic minced
1 cup chopped broccoli
olive oil or butter

Melt two tablespoons butter or heat 2 table spoons olive oil in a medium pot.  Add onion and garlic and saute until translucent.  Add quinoa and saute until light brown.  Pour in chicken stock and bring to a boil.  Cover and turn down heat to simmer.  Set kitchen timer for 12 minutes.  Toss in broccoli, cover and set timer for another 2 minutes.
